Considered one of the best beef products in the world. The Rubia Gallega breed is raised mainly in Galicia and with it's almost purple colour, and fat ranging from a pearl white to a yolk yellow, you can imagine the unique flavours and textures. Intensely savoury with soft and fine texture.
Storage condition: Chilled 0-4C, Frozen -20C.
Alfred's recommendation: Sear both sides in a pan for around 8-10 minutes until it gets a caramelised brown crust. Recommended to enjoy medium rare.
